If you’re like many of us, you enjoy grilling outside on your patio for family and friends. Here’s an easy way you can make the most of your grill by preparing a taco dish, complete with tacos, chips, guacamole, salsa, corn, and margaritas. Turn on some music, and you’re ready to get started.
You may want to start by making the margaritas, so your guests or family (adults only, of course) can enjoy a drink while you cook. Margaritas are easy! Just pick up some margarita mix and tequila, add a shot of tequila to a cup, and then fill the rest with margarita mix. If you’d like, you can rim the glass with salt by wetting the top of the glass with water and then dipping it in a place of salt. A twist is the frozen margarita—simply blend the mix with some ice, and you’re all set.
Next prepare your dips. For the guacamole, mash three avocadoes together, a diced tomato, a diced onion, a halfcup of cilantro, and thinly sliced radishes.
For the salsa, again dice a tomato and an onion, add cilantro and corn, and you’re good to go.
Now it’s time to grill!Start with the corn, as this will take the longest—about fifteen to twenty minutes, turning it every five minutes. You can grill the corn straight in the husk, and then take it out after the grilling is complete. It will have a nice smoky flavor. You may want to butter the corn, or you can spread mayonnaise over it and then sprinkle it with parmesan cheese in a traditional Mexican style.
Grill the meat of your choice and cook as desired, whether that’s rare or well done. When it’s almost time to take the meat off, place the tortillas on the grill for a few moments and then flip them so they are toasted. Slice up the meat and you are all done.
If you have dining furniture for your patio, then it’s time to set the table. You can use disposable plates and cups for ease of cleanup, or you can use whatever permanent dishes you have in the kitchen. Lay out the food in the middle for everyone to dig in. You may have already been enjoying the chips, guacamole, and salsa. You can move these to the side and place the meat and tortillas on a serving platter in the center. Condiments are up to you, and you might want to consider cilantro, onion, tomato, cheese, and lettuce. Place the corn to the side as well. It’s time to enjoy your meal!
Once you are finished with your meal, you may want to sit around and talk, enjoying one another’s company. You can stay at the table or move to patio couches, if you have them. You can still enjoy the chips and dip, and margaritas.
